I wanted to make something really “holiday-ish” for Groundhog Day (February 2nd), so I went off searching for some ideas.  As it turns out, Americans don’t really celebrate Groundhog Day with food.  I came up with a couple of ideas during my search, some which I just didn’t feel right about (Serving “ground hog” otherwise known as sausage or pork? Come on.)  But I did come across a cute idea that I want to share with you.

Groundhog Muffins

I spent a good amount of time making these, but had a fun time doing it.  And, hey, my hands and mind were busy, so I wasn’t thinking about the fact that I was indeed not smoking (I quit for the umpteenth time on the 1st).  I would suggest that if you want to send some of these super cute treats with your kids to school, or if you want to throw your very own Groundhog celebration, you might make them the day before.  They are a bit time intensive.

Also, don’t use the “fun-sized” candy bars, because they don’t work (they’re too small).  Also, it seems awkward to build the face on top of the almond in the Almond Joy, but just stick with it – when they are done they look just right.  Oh, and be prepared because every single one of my kids asked “Why did you make beaver cupcakes?”.  Oh well, they were still super cute and call them beavers or call them groundhogs, they were eaten and enjoyed.

Groundhog Muffins

Muffins or cupcakes – your choice (I was feeling particularly lazy, so I purchased mine from the bakery)
Almond Joy candy bar (for every 2 muffins you will need 1 candybar)
1 square semi-sweet baking chocolate, melted
Mini MnMs candies
White decorating icing
Black decorating icing
Red spice drops
White sprinkles, or “jimmys”
Toothpicks

Start by putting two white dots of icing at the top of the almond for eyes.  Let set up a bit and then use a toothpick to dot black decorating icing on for the pupils.

Cut small triangles of the spice drop off for the nose and use a toothpick dipped in melted chocolate to attach it directly below the eyes.

Use a toothpick dipped melted chocolate to attach two mini MnMs below the nose for the cheeks.

Use the white icing to attach two jimmys under the cheeks for the teeth.

Use a toothpick dipped in melted chocolate to attach two more mini MnMs above the almond on each side for ears.  I ran out of brown MnMs, so just used the toothpick to paint chocolate over the colored MnMs.

Let dry.  Cut a small pocket in your muffin or cupcake and gently push the “Groundhog” candy into the muffin.
