Roasted red peppers are actually very easy to make and lend fantastic flavor to everything from pizza to pasta dishes.
Preheat oven to 450 degrees.
Wash peppers well, cut in half, and remove seeds and stems.
Lightly oil a cookie sheet with olive oil and place peppers on cookie sheet with the skin facing up.
Bake for 20 to 30 minutes, until skin of pepper is black.
Remove from oven and place peppers inside a bowl and cover with plastic wrap. Leave covered in the bowl for 12-15 minutes. This allows the steam to loosen the skin.
Cool and peel off the skin. |
